Jamaican Rum Cake

INGREDIENTS:

  • 7-up dough recipe
  • 1 cup pineapple preserves
  • 1 cup apple preserves
  • 1 cup flaked coconut
  • 3 tbsp Appleton white rum

COOKING INSTRUCTIONS:

  1. Pre-heat oven 375 degrees.
  2. Press dough into greased cake pan (approx. 9in x 13in).
  3. Spread preserves evenly over dough. Then sprinkle coconut on top.
  4. Cover; let rise in warm place until double, about 30 minutes.
  5. Bake at 375 degrees for 25-30 minutes. If coconut gets too brown, cover loosely with foil last 5-10 minutes of baking.
  6. Cool 10 minutes in pan, then remove from pan.

Serve this delicious Jamaican Rum Cake warm or cold. If you have any modifications to this recipes then feel free to leave a comment.

    I am Jamaican…and besides the Appleton Rum…there is NOTHING Jamaican about this recipe. Please don’t try to carry down our name by trying to imitate us!!!!! There is nothing called 7-up dough recipe in the Jamaican cuisine

    I am Jamaican and this recipe along with most that I have seen on the web is horribly wrong…but, at least you’ve got the rum right, but we put a lot more than just 3tbs…sorry…try again…

    What is 7 cup dough recipe?? There is no such thing. This has nothing to do with Jamaican food. This is very confusing for people who are trying to cook Jamaican food.

    Ah bway!!! I’m glad so many people have already made it clear that this is NOT a jamaican recipe. A better description would be Appleton Rum cake or something similar but it is not something we bake. It is however similar to Cayman’s Tortuga Rum cake which in it’s original form (they have different flavours now) is a yellow light cake with lots of Tortuga Rum. I don’t know if any other caribbean island does a similar cake but we don’t.

    The nearest to a rum cake that we have is our fruit cake (a lot more work) which is baked mostly at Christmas and for weddings and as Micah said it uses a lot more rum:)

    Fruit Cakes are the specialty of my grandmother, she bakes lots of fruit cakes.,:~
