Ah bway!!! I'm glad so many people have already made it clear that this is NOT a jamaican recipe. A better description would be Appleton Rum cake or something similar but it is not something we bake. It is however similar to Cayman's Tortuga Rum cake which in it's original form (they have different flavours now) is a yellow light cake with lots of Tortuga Rum. I don't know if any other caribbean island does a similar cake but we don't.

The nearest to a rum cake that we have is our fruit cake (a lot more work) which is baked mostly at Christmas and for weddings and as Micah said it uses a lot more rum:)

What is 7 cup dough recipe?? There is no such thing. This has nothing to do with Jamaican food. This is very confusing for people who are trying to cook Jamaican food.

My thoughts exactly Sherri- where on earth did they get this recipe from?? You couldn't have said it better. They need to remove this recipe from this site altogether and NEVER post it again!

I am Jamaican and this recipe along with most that I have seen on the web is horribly wrong...but, at least you've got the rum right, but we put a lot more than just 3tbs...sorry...try again...
