I'm glad so many people have already made it clear that this is NOT a jamaican recipe. A better description would be Appleton Rum cake or something similar but it is not something we bake. It is however similar to Cayman's Tortuga Rum cake which in it's original form (they have different flavours now) is a yellow light cake with lots of Tortuga Rum. I don't know if any other caribbean island does a similar cake but we don't. The nearest to a rum cake that we have is our fruit cake (a lot more work) which is baked mostly at Christmas and for weddings and as Micah said it uses a lot more rum:) Ah bway!!!
