    I would like to know how long you cook the chicken in the oven?

    During our family Christmas celebration some years ago, I was asked to make a Jerk Roast, and they have insisted I do it every year since… :-)

    Make a paste of equal parts ground allspice and thyme (highest quality), with plenty of fresh garlic using a mortar and pestle. Use a bit of soy sauce to get the consistancy right.

    Scotch bonnet peppers weren’t on hand, so I cheated, and used a good quality (that word again) cayenne.

    Rub down the beast, and wrap it in plastic wrap. Leave in the fridge for a day or two.

    Unwrap and roast. Might not be authentic, but it goes over really well. Thanks.

    cook it in the oven till it’s 165f or 74c at the thickest part of the meat
