		<description>During our family Christmas celebration some years ago, I was asked to make a Jerk Roast, and they have insisted I do it every year since... :-)

Make a paste of equal parts ground allspice and thyme (highest quality), with plenty of fresh garlic using a mortar and pestle. Use a bit of soy sauce to get the consistancy right.

Scotch bonnet peppers weren&#039;t on hand, so I cheated, and used a good quality (that word again) cayenne.

Rub down the beast, and wrap it in plastic wrap. Leave in the fridge for a day or two.

Unwrap and roast. Might not be authentic, but it goes over really well. Thanks.</description>
